I love the smell of Christmas biscuits baking. It remind me of when I was little and the excitement that went with preparations for having our Christmas feast with family and friends. Traditionally, our Christmas tree went up on the 1st of December, followed by letters to santa and the baking of sweet treats.

These vanilla biscuits are a traditional German biscuit that my family would make only at Christmas time. Having them only once a year makes the pleasure of baking them, and subsequently eating them, even more divine.

These Christmas biscuits are super easy to make and will keep for several weeks. They also make a sweet gift wrapped in cellophane and ribbons.

Vanilla Christmas Biscuits

Makes 30 large heart shaped biscuits

Ingredients

  • 300g plain flour (you can substitute for coconut flour to make them gluten-free)
  • 125g caster sugar (or coconut sugar)
  • 125g ground almonds (almond meal or almond flour)
  • 250g unsalted butter, at room temperature & cut into cubes (goat butter works well too and has less lactose)
  • 1/2 teaspoon ground vanilla
  • 3 egg yolks

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Combine flour, sugar, almonds and vanilla in a large bowl. Stir to combine.
  3. Add egg yolks and cubed butter. Rub the butter through the dry mixture with your finger tips until it begins to form a dough. Continue kneading until the dough comes together.
  4. Roll/press the dough out on grease proof paper then use a cookie cutter to cut out biscuits. Place on oven trays prepared with grease proof baking paper. Leave a good amount of space between the biscuits so that they don’t end up baking together. If the dough is too sticky to with work with, wrap in cling film and place in the fridge for 30 minutes.
  5. Bake for approximately 12 minutes or until the biscuits are golden.
  6. Remove from the oven and allow cool before dusting with icing sugar (use pure ice sugar if you want them to be gluten-free).
