Quick and easy watermelon sorbet

Watermelon & Mint

Sometimes after dinner I feel like a refreshing, sweet treat. And a freshly made sorbet really hits the spot.

This recipe just needs frozen fruit and a blender, and in a few minutes you will have a healthy sorbet that is dairy-free without added sugar (traditional sorbets usually add a heap of sugar and water).

Watermelon is a refreshing fruit that is soaked with nutrients. Each juicy bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids. There’s even a modest amount of potassium and it is a great way to stay hydrated.

Watermelon Sorbet

Serves: 2


  • 3 cups watermelon chunks, frozen
  • Juice 2 lime
  • 2 mint leaves
  • 2-4 Tablespoons of freshly squeezed orange juice or water
  • Pistachio nuts, blitzed into small pieces to serve


  1. Add peeled pistachio nuts to a food processor and blitz until they are in small pieces. Reserve to sprinkle over the top a the end.
  2. Add frozen watermelon chunks, lime juice and some of the orange juice (or water) to a blender. Blitz until combined but still really thick. Stop your blender regularly and scrap down the sides to help move the frozen watermelon around. If your blender has trouble blitzing, add a little bit more juice/ water to get it moving.
  3. Serve in glasses or small bowls.
  4. Sprinkle pistachio pieces over the top and serve immediately.

Time Saver Tip

  • Buy you watermelon in season and freeze to use as needed.
  • Feel free to try this recipe with other fruit, such as berries or melons.
