Healthy Snack: Cannellini Bean Dip

Looking for a healthy snack to have in the afternoon that is not full of sugar?

Dips are a great, healthy snack that you (and your kids) can enjoy – guilt free. I like to have mine with rice crackers or some carrot and celery sticks.

This cannellini bean dip takes only a few minutes to make and is a good source of protein, fibre and folate (part of the B group vitamins). It has also been linked with promoting good gut health and helping to prevent IBS symptoms.

Cannellini Bean Dip

Ingredients

  • 380g cannellini beans in water, drained
  • 1 clove garlic, peeled
  • 1/2 cup loosely packed fresh parsley
  • Juice from 1/2 lemon
  • 2-4 tablespoons olive oil
  • pinch salt and pepper, to taste

Method

  1. Add all ingredients to a food processor and blitz until well combined. If it is too dry add more olive oil.
  2. Taste and adjust season.

Time Saver Tip

This dip will keep in the fridge for up to five days. Works great as part of a cheese board or as snack with carrot and celery sticks. You can also jazz up your tuna salad wrap by adding some this dip.
