Creamy Mango Yogurt (Dairy-free)

Mango Cashew Yogurt-2

As promised, this week I am bringing you a recipe for Creamy Mango Yogurt. It is gluten-free and dairy-free so it can be enjoyed by all.

It is part way between a cream and a yogurt. I have eaten it with a berry crumble pie and as a yogurt with fresh fruit.

This recipe (with a few of my tweaks) is from Jasmine Hemsley and Melissa Hemsley new book The Art of Eating Well. Have you read it?

Ingredients

  • 3/4 cup raw cashew nuts
  • 1/4 cup frozen or fresh mango
  • 3/4 teaspoon vanilla extract
  • 1 Tablespoon raw honey
  • Pinch of sea Salt
  • 1/4 cup water

Method

  • Soak Cashews in water for 2 hours. Rinse and drain before using.
  • If using frozen mango, allow mango to defrost while your cashews are soaking.
  • In a blender, combine all ingredients and blend until smooth. You may need to scrape down the sides part way through before blending again.
  • Add more water if the mixture is too thick.
