Asparagus Soup

Asparagus is in season at the moment, celebrating that spring is here (in the UK). It is one of my favourite vegetables – it is versatile and eats well in soups or grilled with a poached egg or two.

This asparagus soup is so easy to make and only needs a handful of ingredients.

Asparagus also has many anti-aging benefits. The more the better I say. 

Anti-aging Benefits of Asparagus

  • Asparagus is loaded with vitamins A, C, E and K and is a very good source of fiber
  • It is a detoxifier and helps rid your body of free radicals which may help to protect against certain forms of cancers
  • Asparagus slows the ageing processing as it is packed with antioxidants
  • It serves as a natural diuretic – the increase in urination helps release fluid build up and rids the body of excess salts.

Time Saver Tip

Make in batches and freeze into single serve portions ready to be taken to work for a nutritious lunch or as a quick mid-week dinner.

Recipe

Ingredients

  • 400 g asparagus, woody ends removed, chopped
  • olive oil
  • 1 medium white onions, peeled and chopped
  • 1 sticks celery, trimmed, de-stringed and chopped
  • 1 leeks, trimmed and chopped
  • 1 litres organic chicken or vegetable stock
  • sea salt
  • freshly ground black pepper

Method

  1. Put a large, deep pan on the heat and add some olive oil. Gently fry the onions, celery and leeks for around 10 minutes, until soft and sweet, without colouring.
  2. Add the chopped asparagus stalks and stock and simmer for 20 minutes with a lid on.
  3. Remove from the heat and blitz with a hand-held blender or in a blender.
  4. Put the soup back on gentle heat. Season the soup bit by bit (this is important) with salt and pepper until just right.
