Are you after a spooky (but stylish) Halloween recipe?

My chocolate mousse is to-die-for with a few added healthy ingredients to keep the nutritional value higher – AKA raw cacao and cashew nuts.

It is an easy one-pot (blender) recipe, just need to leave it to set in the fridge overnight.

Chocolate Mousse


Serves 4-6 (depending on the size of your glasses)

  • 1 cup cashews, soaked in cold water for 2 hrs and then drained
  • 1 cup water
  • 6 medjool dates, pitted and chopped
  • 200 ml coconut milk
  • Pinch sea salt
  • 1/2 Tablespoon vanilla bean paste
  • 1/4 cup raw cacao powder

For decorations: 2 pieces dark chocolate and 1 teaspoon finely chopped mint leaves.


  1. Combine all ingredients in a blender and blitz until super smooth.
  2. Taste and adjust sweetness.
  3. Serve in individual glasses and place in the fridge overnight to set.
  4. Remove from the fridge just before serving and decorate with grated dark chocolate and a sprinkle of chopped mint leave.  You could also add little edible flowers too. Use a paddle-pop stick or cardboard written with R.I.P for extra spooky effect (or if you are super crafty, a plain biscuit if with icing to write R.I.P). Lego skeletons are optional.

Time Saver Tip

  • You can make the mousse up to 1-2 days in advance.
  • If you need to speed up the setting time, pop them in the freezer for a short while.
