Cherry Ripe Slice

When mid afternoon hunger strikes, you need to have something healthy on-hand to snack on.

This no-bake cherry ripe slice recipe is quick to make and goes perfectly with a cup of peppermint tea. It is a little power bar of goodness that will get you through the afternoon right up until dinner time. The raw cacao gives it a decadent chocolatey taste and the dates and cranberries add some natural sweetness.

You can also serve up this slice as a dessert with a scoop of cashew nut ice cream.

Recipe Cherry Ripe Slice

Ingredients

Makes: approx 20 pieces

  • 8 Medjool Dates, pitted and chopped
  • 1 Cup dried cranberries
  • 2 Cups raw Cashew Nuts
  • ½ Cup Almond (without skin)
  • ¾ Cup raw Cacao Powder
  • A Pinch Of Sea Salt
  • ½ Cup Unsweetened Shredded Coconuts
  • 2 Tbsp Vanilla Extract (ideally alcohol free)
  • 2 to 3 Tbsp Cold Water

Method

  1. Line a slice tin with baking paper
  2. Combine dates, cashews, almonds, cacoa powder, and sea salt in a food processor. Pulse and process all the ingredients together until the texture is coarse.
  3. Then add the shredded coconut, a quick pulse, and add the vanilla extract, a little water at a time until it reaches a dry but moist dough consistency.
  4. Scrape the dough mixture into the lined pan, press evenly with the back of spoon, and chill for about an hour before cutting up.

Time Saver Tip

Store in an air tight container in the fridge. It will keep for up to two weeks.
